The farm, located in Endine Gaiano, has been producing delicious cheeses for over seventy years.
The Filisetti Farm is in the hamlet named Piangaiano, near Lake Endine. Founded 70 years ago by grandparents Michele and Cecilia, over the years it has grown as a result of the hard work by Sperandio, his wife Silvana and their children Michele, Daniele and Francesca, who have brought innovation and numerous improvements to production processes.
The farm’s fields provide hay, fodder and cereals that are mainly used to feed the cattle, all born and reared on the farm.
According to the approach followed by this dairy farm, an experienced and motivated cheesemaker should have detailed knowledge of traditional and natural processing methods, and should be more interested in quality than quantity.
For this reason, the company uses only unpasteurised milk to make its cheeses, produced fresh every day by its 80 cows and processed using traditional local methods, without adding colorants or preservatives.
